Tomato Tart

An easy late summer treat.

The end of Summer always brings up complex feelings of living in Minnesota. On one hand, the hot days are over. On the other, the doom and gloom of winter is near. On the positive side though, it's tomato season. I had some puff pastry in my freezer so I decided to use my farmer's market tomatoes to make a snack. It ended up tasting like pizza and was exactly what I needed.

I found inspiration for this recipe from @thomas_straker on Instagram.

Ingredients

  • Ripe heirloom tomato (any tomato will work though)
  • Puff Pastry
  • Chives
  • Garlic
  • Cheese (Gruyere or Parmesean)
  • Salt, Pepper
  • Olive Oil

Instructions

  1. Cut the tomato into thin-ish slices and salt both sides. Let them sit for a few minutes then dab them with a paper towel to get some of the excess moisture out.
  2. Slice your garlic
  3. Roll out your puff pastry and use a knife to draw a square border
  4. Layer tomatoes with garlic slices and put a few spins of pepper on top
  5. Bake at 400 degrees for 20-25 minutes until puff pastry is brown on edges and done
  6. Top with chives, more salt and pepper, and olive oil
  7. Grate cheese around the edges and on top, to your heart's content.
